Short Answer: Infinity means that something just doesn't end. For example, there is an infinity of numbers: 0,1,2,3...5*10^100....

My Spiel: Infinity is a very interesting word. The latin meaning of the word is "not finite", meaning that there is no finite/end.  However, there are many infinities that we can see an end to. For example, from 0 to 1 there is an infinity of numbers, there is 0.89, 0.99, 0.99999, etc. This is infinite, yet there is a perceived end to this infinity, 1. Moreover, infinity is actually the label to given to things that we don't understand (the in between). We see a start and finish, yet we don't see the in between. Infinity is really the notion that nothing can truly be proved or disproved. For example, some may that there are an infinite amount of universes just stacked up on each other or in "bubbles" as the bubble theory alludes to. Either way, we can neither prove or disprove this because it is beyond our perception of the world. That is why I believe that infinity is the state of not being able to be proved or disproved
