If we are simplifying to real numbers, why is it that we are able to simplify this expression: 

but not this expression: √-64

You cannot simplify a negative number, because no two same numbers with any positivity have a product that is negative. \(\sqrt{-64} = 8i\)\(i\) stands for an imaginary number.
