  180 guests / 10 guests/recipe =   18 recipes

 

18 recipes  x  1.8 kg/recipe = 32.4 kg

 

32.4 kg   x    2.2 lb/kg   = 71.28   pounds of eggplant

A rough estimate would be 72 pounds.

'Cause it's always better to be on the safe side when cooking.

But 71.43 pounds is more on point, since 1 pound equals 0.453592370kg.
