Factor: [ (x + 3)(x + 2) ] / [ (x + 4)(x - 4) ] · [ (x + 7)(x + 4) ] / [ (x + 3)(x - 1) ]
Rearrange: [ (x + 3)(x + 2)(x + 7)(x + 4) ] / [ (x + 4)(x - 4)(x + 3)(x - 1) ]
Cancelling the common terms: [ (x + 2)(x + 7) ] / [ (x - 4)(x - 1) ]
If you wish, you can multiply out these factors.
