It has been a long time since I worked with vectors but I think this is right.

The angle between the x axis (on the right hand side) and V is tan -1 (3/8) = 20.556 degrees

The angle between the x axis (on the left hand side because of the negative sign) and U is tan -1(7/5) = 54.462 degrees

So the angle between them is 180 - tan -1 (3/8) - tan -1(7/5) = 104.981 = 105.0 degrees (correct to 1 decimal place)
