"How would I find x and y to plot on a graph for the equation x-y=3 ? "

Rearrange the equation as:  y = x - 3

Choose two values of x (say, x = 0 and x = 10) and calculate the corresponding values of y.

Plot the two points on a graph and join them by a straight line.
