I need math help, how do you find the Side C (the longest side) of a triangle if you only have the side lengths of A and B?

If you know that the triangle is a right triangle, use the Pythagorean Theorem.

If you don't know that it is a right triangle, you can't find the third side unless you have more information; for instance, the size of the angle between the two sides that you know.
